There are a lot of Cajun chicken recipes on the internet but I thought I would try making up my own wet rub. I thought the chicken turned out tasty–it was very juicy and tender. The rub was spicy and savory and I was quite happy with the results. I made some potato fries with the chicken and they were both pretty good together. I have a lot of leftover chicken so I think I will try making some chicken quesadillas out of it too.
Roasted Cajun Chicken
(Makes 4+ Servings)

Ingredients:
- 1 whole chicken
- 1/4 c. olive oil
- 1 tbsp. apple cider vinegar
- 1 tbsp dijon mustard
- 1 tbsp honey
- 2 cloves garlic, chopped
- 1/2 tsp. cinnamon
- 3 tbsp. paprika
- 2 tsp cayenne
- 1 tsp allspice
- 1 tsp sage
Directions:
- In a bowl, mix all the spices together and in a separate bowl mix the liquids together. Whisk in half of the blend into the oil mixture.
- Wash the chicken and pat dry.
- Pour the rub all over the chicken, and pat it down with the dry spices.
- Cover loosely with tin foil and cook in a preheated 375F oven for 1 1/2 – 2 hours.
