Chile Verde is a sweet, spicy salsa that is made most commonly with tomatillos and a number of different green chiles. This salsa goes well with chicken, pork and fish, and can be used as a topping for burritos, tacos, tamales, etc. The tomatillos provide a great sweet and sour flavor that I like a lot. Depending on how smooth you wish to puree the sauce, you could create a thicker version that would be great as a salsa dip as well.
Chile Verde
(Makes about 3 cups)

Ingredients:
- 1 lb tomatillos, husked and quartered
- 3 garlic cloves, minced
- 1 jalapeno, seeds and ribs removed, chopped
- 1 Anaheim chile, halved
- 2 poblano chiles, halved
- 1 lime, juice
- 1/2 small onion, chopped
- 1 bunch cilantro leaves, cleaned and chopped
- salt and pepper to taste
Directions:
- Place the tomatillos, poblano, anaheim, and jalapeno peppers on a baking sheet with the peppers’ skin side up.
- Broil the tomatillos, and peppers until the skins are slightly blackened and peeling.
- Combine all ingredients in a blender and puree.
