While I love cooking a huge whole turkey for the holidays, there is no need to get a whole turkey when you’re cooking for two. Instead, I picked up a turkey breast from the store which weighed in at about 7 pounds with the bones so that was more than enough for two. Of course one of the best things about thanksgiving is the leftovers for turkey sandwiches! This turkey was so tender and juicy–I was very happy with how it turned out.
Herb Roasted Turkey Breast
(Makes 3+ Servings)

- 2 tablespoons olive oil
- 2 teaspoons sage
- 1 teaspoon rosemary
- 2 teaspoons thyme
- 2 cloves garlic, chopped
- salt and pepper to taste
- 1 (7 pound) turkey breast
- 1 yellow onion (cut into thick wedges)
- salt and pepper to taste
Directions:
1. Mix the oil, sage, rosemary, thyme, garlic, salt and pepper and rub the mixture all over turkey breast.
2. Place the onions in a shallow pan and the turkey breast on top. Cover loosely with tin foil.
4. Roast at 350F for about 2 hours
5. Let rest for 10 minutes before serving.
