I have really been enjoying the results of adding pumpkin to different recipes. This bread is just like a banana bread with a hint of pumpkin flavor. The bread is seasoned with ginger, allspice and cinnamon and this recipe works great for the holidays. With the addition of the pumpkin to the mashed banana the result was a very soft, moist bread. I can’t wait to make this again!
Pumpkin and Banana Bread
(Makes 1 Loaf)

Ingredients:
- 2 over-ripe bananas, mashed
- 1 cup pumpkin puree
- 1/3 cup canola oil
- 2 eggs, lightly beaten
- 2 cups flour
- 1/2 cup rolled oats
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2/3 cup sugar
- 1/2 tsp nutmeg
- 1/2 tsp ginger
- 1 tsp cinnamon
- 1/2 tsp allspice
Directions:
- Combine the mashed banana, pumpkin puree, oil, and eggs in a large bowl.
- Place flour, sugar, baking powder, baking soda, salt, nutmeg, ginger, allspice, and cinnamon in a medium bowl and stir with a whisk.
- Add flour mixture to banana and pumpkin mixture.
- Pour batter into loaf pan and bake for 1 hour or until toothpick placed in center comes out clean.
