Jams are fun and easy to make, so I just keep trying new kinds! Jams require an acid component, like lemon juice, so I decided to go with lime juice for something a bit different. The lime zest also amped up the lime flavor of the jam which I liked quite a bit. Oddly enough, it reminds me of strawberry pez. You would think this would be strange on toast but it actually works quite well!
Strawberry Lime Jam
(Makes 4 Cups)

Ingredients:
- 4 Cups (32 oz.) strawberries, washed and halved
- 3 1/2 Cups sugar
- 1 packet liquid pectin (Certo brand)
- 1 lime, juice and zest
Directions:
- In a bowl, mash the strawberries with a fork or potato masher.
- In a saucepan, pour in the mashed strawberries and sugar over high heat.
- Once the jam has reached a hard boil, add the pectin and lime juice, and zest. Stir, and return to a hard boil for 1 minute.
- Skim off the foam on top.
- Pour into sterilized jars and let cool 40 minutes before placing in the refrigerator.
