I had never tried making bark before but this recipe was very easy to follow. The second layer is made of melted white chocolate that I dyed green with a little food coloring. If you want to make it even more minty add a drop of mint extract to one of the chocolate layers. This bark looks very pretty for the holidays!
Chocolate Peppermint Bark
(Makes about 2 pounds)

Ingredients:
- 12 6- to 7-inch long red and white peppermint candy canes
- 1 pound semisweet chocolate, finely chopped
- 1 pound white chocolate, finely chopped
- 1 large cookie sheet with edges, lined with aluminum foil
- 1 drop green food coloring (optional)
- 1 drop mint extract (optional)
Directions:
- Crush candy canes with a rolling pin or hammer. With a strainer, shake out the powder.
- In a pan on low heat, melt the semisweet chocolate, stirring frequently.
- Pour the chocolate into an even layer, about 1/8 inch thick, all over the aluminum foil. Place in the refrigerator to firm.
- In another pan, melt the white chocolate on low heat, stirring frequently. Add a drop of green food coloring and stir.
- Spread a thin layer over the chocolate. Sprinkle the chopped candy over white chocolate. Place the bark in the refrigerator until completely firm, about 20 minutes.
