Bacon, Avocado and Roasted Jalapeno Sandwich

This sandwich is my top favorite at the moment and it’s actually really easy to make. How can you not love bacon and avocado in one sandwich? That is practically a match made in heaven! The key to this recipe is the roasted peppers. I like to use jalapenos that are on the moderately hot side. You can make them milder by removing the pith–that’s the white part–and the seeds. I get them good and charred in the broiler and they add a nice grilled flavor. For the avocados I like to mash these as if I were making guacamole. The mashed avocado holds the sandwich together like a paste for easier flipping. I know this might sound crazy but I actually love grilling these over the stove in the leftover bacon grease. Why dirty up a different pan with oil when you have a perfectly good one to cook with? If you’re squeamish about using bacon fat, just wipe down the pan and add the oil of your choice to it but I do recommend the bacon fat for this. You also gotta have sourdough on hand for this one; I’ve tried making it with other breads and it just isn’t as good without sourdough! The cheese I’m a little more flexible on. I’ve tried it with an aged white cheddar and swiss and I recommend both. The cheddar has a little more bite and takes longer to melt down. I also tried it with Jarlsberg swiss which added creaminess and melted pretty quickly. I liked both but maybe preferred the swiss a bit more than the cheddar. It’s high summer and what could be more summery than black bean burgers? Don’t give the ‘bean’ part the side eye yet, carnivores. I promise this recipe is delicious and full of flavor. I’ve made similar black bean burgers in the past and this one also did not disappoint. While I’m a big fan of regular beef burgers, bean burgers are a great change of pace. You can do all kinds of things with these burgers; the possibilities are pretty much endless. Since fresh corn on the cob is in season I used that as part of the bean filling and it provided fresh bursts of sweetness in the burger. I used pepper jack for the cheese but you can use any that suits your fancy. This recipe makes about 8 large patties but they can be stored for 2 days in the refrigerator before cooking. I served mine with a batch of baked chipotle fries and it made a fantastic side!

Messy, gooey, hot grilled cheeses are one of my favorite guilty pleasures. Who can say ‘no’ to one of these babies? This sandwich comes from the South so you know it’s going to be healthy. Each sandwich is loaded with Pimento cream cheese (also known as the “Caviar of the South”) and smoked Gouda. Obviously, the sandwich is very rich and filled with delicious flavors. The red pimentos are the same pickled peppers found in green olives. You can find these sold in separate jars by the olives and condiments section in your grocery store. The pimento cream cheese can be served as a condiment as well, with crackers, chips or celery. This recipe pairs perfectly with a simple tomato soup and salad.

Black Bean Burger with Caramelized Onions and Avocado

Summer is almost over but I am resisting that fact by making a bunch of summery food. These black bean burgers are totally loaded with lots of add-ons: mashed avocado, chipotle mayo, tomato, melted cheddar, and crispy caramelized onions. The actual burger is mixed with sweet corn, rolled oats and spices. It’s super filling and loaded with protein. The burgers are a little bit delicate and they do best cooked over a hot saute pan. Everything came together really well and it turned out super tasty! You can always add whatever fixins you want. Some other options would be sprouts, feta cheese, sauteed mushrooms, pickles and lettuce.

BBQ Grilled Cheese Chicken Sandwich

The messiest foods are the best foods, especially when we’re talking about sandwiches. If the sandwich can’t be contained inside two pieces of bread it’s gotta be good! This sandwich has a lot of good things going for it: shredded chicken smothered in spicy BBQ sauce, caramelized onions, and sharp cheddar cheese. Since barbeque sauce is a staple in my kitchen, I just make my own since it’s so easy. This sandwich packs a ton of flavor! The combination of the melted sharp cheddar with the flavors of the BBQ sauce and caramelized onions was so tasty. I served the sandwich alongside some smoky chipotle fries. I will definitely be making this again!

BBQ Chicken Sandwich with Melted Gruyere

The days are getting longer and each day feels a little bit closer to summer time! And what says summer more than barbeque grilled chicken sandwiches? I chose a simple recipe for barbeque sauce made with molasses, garlic, apple cider vinegar, and chipotle peppers. Then as a side I made some baked potato fries served with malt vinegar. I chose a smoky Gruyere cheese to go with the sandwich which paired very will with the flavors of the barbeque sauce. This was a tasty dish that I will definitely make again this summer!

French Onion Soup Grilled Cheese Sandwich

At first when I came up with the idea of a French onion grilled cheese sandwich I thought I was being original.  Turns out loads of people had though of it before me which suggests that this sandwich is a pretty good idea!  I couldn’t believe how similar it tasted to the actual soup.  The bread slices were the croutons, the melted gruyere and wine/beef stock braised onions all came together to fool my brain into thinking I was eating the real soup.  The only thing difficult about this recipe is eating it because those onions are pretty slippery.  I used potato bread which is what I had on hand but a nice crusty baguette would work nicely.  The sandwich was so tasty and really easy to put together (except for the onions that kept slipping out).  I look forward to having this again!

Turkey Burger with Caramelized Onions, Gruyere and Sage Mayo

Turkey burgers are the perfect alternative to beef burgers because they are versatile and have great flavor.  I had never tried turkey burgers before and I was surprised by how tasty they were! This recipe ended up being a celebration of the end of summer and a good way to tie two seasons together. The burgers were juicy and charred, and went perfectly with the caramelized onions and smoky gruyere. I chose sweet potato fries for a side and they were really good with the burger. The sage mayo was another great accompaniment with the turkey burger as well.  The recipe is similar to last Thanksgiving’s Roasted Butternut Squash recipe with caramelized onions and gruyere. The sandwich reminded me of a summer version of Thanksgiving dinner, and just as tasty too!

Caprese Grilled Cheese Sandwich with Balsamic Roasted Tomatoes

One of my favorite summer dishes is caprese salad. Sliced tomatoes, fresh mozzarella, basil leaves and balsamic vinegar offer the perfect combination of flavors. It also turns out these ingredients are a perfect grilled cheese in the making! The one issue was the balsamic vinegar–how to incorporate a liquid ingredient on a sandwich that isn’t a dressing? My solution was to simply roast the tomatoes in balsamic vinegar in the oven which infused the flavor of the balsamic into the tomato. I chose sourdough for the bread which worked nicely with the other ingredients. The sandwich was really tasty and not hard to make at all. It was a great way to turn a caprese salad appetizer into the main course!

Prosciutto, Manchego and Fig Jam Sandwich

A while back I made a prosciutto, mozzarella and fig panini on ciabatta bread. I wanted to revisit those flavors because I loved the combination of smoky and savory prosciutto along with the sweet and fruity fig jam. Instead of mozzarella I went with Manchego which is a cheese that I have been using quite a bit in sandwiches lately. Manchego is a little bit sweet and a little bit tart so it worked perfectly with the other ingredients. I decided on sourdough bread instead of ciabatta just to try something a little different. The sandwich turned out really great! I loved how the flavors balanced each other really well. It’s really easy to make too since it only needs 4 ingredients! The fig jam can be sweet so I just spread it thinly over the bread. It was a great combination of sweet and savory flavors, so I will definitely be having this again!
