I had two leftover chicken thighs from the roasted Cajun chicken so I thought I would use them for chicken quesadillas. I once ordered a quesadilla at this great restaurant that used Manchego cheese and caramelized onions. It was really good so I thought I would try to recreate it. Although I only had cheddar cheese the quesadilla turned out pretty well. I would like to try this recipe out with some of the more tasty Mexican cheeses instead of just plain cheddar.
Chicken Quesadilla with Caramelized Onions
(Makes 1-2 Servings)

Ingredients:
- 2 large tortillas
- 1/2 – 3/4 c. cheese, grated
- 2 chicken thighs, shredded
- 1 small yellow onion, sliced thin
- 1 tbsp brown sugar
- 1 tbsp Canola oil
- handful cilantro, chopped
- 1 jalapeno, diced
- Guacamole (optional)
Directions:
- In a saute pan, cook the onions with the brown sugar until soft, about 10 minutes.
- Toast the tortillas on the stove top, about 10 seconds on each side.
- Add the chicken, cheese, onion, jalapeno, and cilantro and bake for for 5-10 minutes in a preheated 425F oven until the cheese is melted.
